Description

Crockpot Angel Chicken is a creamy, comforting slow cooker meal featuring tender chicken breasts simmered in a rich sauce of cream cheese, cream of chicken soup, and Italian seasoning. Served over delicate angel hair pasta, this easy-to-make dish is perfect for a satisfying family dinner.

Ingredients

Scale

Chicken and Sauce

  • 4 boneless skinless chicken breasts
  • 1 packet (1 oz) dry Italian dressing mix
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup chicken broth
  • 4 oz cream cheese, softened
  • ¼ cup unsalted butter
  • 1 tablespoon minced garlic (optional)

For Serving

  • 12 oz angel hair pasta, cooked according to package directions
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the Slow Cooker: Lightly grease the inside of your slow cooker insert to prevent sticking, then place the 4 boneless skinless chicken breasts at the bottom in a single layer.
  2. Make the Creamy Sauce: In a medium saucepan over low heat, melt together the ¼ cup unsalted butter and 4 oz softened cream cheese, stirring until smooth and fully combined. Then add the 1 can of cream of chicken soup, ½ cup chicken broth, 1 packet dry Italian dressing mix, and 1 tablespoon minced garlic if using. Whisk the mixture well until heated through and smooth.
  3. Combine in Slow Cooker: Pour the prepared creamy sauce evenly over the chicken breasts in the slow cooker, ensuring they are well coated. Cover with the lid.
  4. Slow Cook the Chicken: Cook on low heat for 4 to 5 hours or on high for 2½ to 3 hours, until the chicken is thoroughly cooked and tender enough to shred easily.
  5. Shred and Coat the Chicken: Once cooked, remove the chicken breasts and shred or slice them. Return the shredded chicken to the slow cooker and stir well to coat with the creamy sauce.
  6. Serve: Serve the creamy, shredded chicken over freshly cooked angel hair pasta. Garnish with freshly chopped parsley for a pop of color and fresh flavor, if desired.

Notes

  • You can substitute cream of mushroom soup instead of cream of chicken for a different flavor or use reduced-sodium soup to lower salt content.
  • Add sliced mushrooms or fresh spinach to the slow cooker along with the chicken for extra flavor and nutrition.
  • This dish pairs wonderfully with a fresh green salad or warm garlic bread to complete the meal.
