Description

These Quick and Easy Peanut Butter Truffles are a delightful no-bake dessert combining creamy peanut butter and rich chocolate. Perfect for a simple homemade treat, they offer a perfect balance of sweet and nutty flavors with a smooth, decadent chocolate coating.

Ingredients

Scale

Peanut Butter Mixture

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt (optional)

Chocolate Coating

  • 1 1/2 cups semisweet chocolate chips
  • 1 tablespoon coconut oil or vegetable oil

Instructions

  1. Prepare Peanut Butter Dough: In a medium bowl, mix the peanut butter, softened butter, vanilla extract, and a pinch of salt if using until smooth and creamy.
  2. Add Powdered Sugar: Gradually add the powdered sugar to the mixture, stirring continuously until a thick dough forms that can be rolled.
  3. Form Truffle Balls: Roll the peanut butter dough into small balls about 1 inch in diameter and place them on a parchment-lined baking sheet for easy handling.
  4. Freeze the Balls: Freeze the peanut butter balls for 15–20 minutes until firm to make the dipping process easier.
  5. Melt Chocolate: While the truffles chill, melt the chocolate chips together with the coconut or vegetable oil in a microwave-safe bowl at 30-second intervals, stirring between each until the chocolate is smooth and fully melted.
  6. Dip the Truffles: Using a fork, dip each peanut butter ball into the melted chocolate, allowing the excess to drip off before returning the coated truffle to the parchment-lined baking sheet.
  7. Chill to Set: Refrigerate the dipped truffles for 10–15 minutes until the chocolate coating is firm and set.
  8. Serve: Serve the truffles chilled or at room temperature for a delicious treat.

Notes

  • For added crunch, mix in 1/4 cup crushed graham crackers or rice cereal into the peanut butter dough before rolling.
  • Store truffles in an airtight container in the refrigerator for up to one week.
  • For longer storage, freeze the truffles and thaw before serving.
