  • 16 large white or cremini mushrooms, stems removed and reserved

Filling

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup onion, finely chopped
  • 1/2 cup breadcrumbs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup cream cheese, softened
  • 2 tablespoons fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat and prepare mushrooms: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Clean the mushrooms gently with a damp paper towel and carefully remove the stems, setting them aside for the filling.
  2. Sauté filling ingredients: Finely chop the reserved mushroom stems. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped mushroom stems, finely chopped onion, and minced garlic. Cook for 4 to 5 minutes until the vegetables are softened and most of the moisture has evaporated.
  3. Mix filling: Remove the skillet from heat. Stir in the breadcrumbs, grated Parmesan cheese, softened cream cheese, chopped parsley, salt, and black pepper. Mix thoroughly until a thick, cohesive filling forms.
  4. Stuff mushrooms: Spoon the filling evenly into each mushroom cap, ensuring they are generously filled but not overflowing.
  5. Prepare for baking: Arrange the stuffed mushrooms on the prepared baking sheet. Lightly spray or drizzle the tops with olive oil or sprinkle additional Parmesan cheese if desired.
  6. Bake: Place the baking sheet in the oven and bake the stuffed mushrooms for 18 to 20 minutes, until the mushrooms are tender and the tops are golden brown.
  7. Serve: Remove from the oven and serve warm. Garnish with extra fresh parsley or Parmesan cheese if desired for an extra touch of flavor and presentation.
